Mesh Optimization Docs Page

Currently, PR #154 adds support for an initial mesh optimization procedure.

However, the visualizations for this simulation are stored in the conversation of that PR, and not in a docs page where they are easily viewable, reproducible, etc.

So, the code which generates those plots should be moved into a docs page.
