Feature: Compatibility tests for different versions of Kafka

Feature description

Tests are currently running against Kafka 3.0.0 (the version shipped in cp-kafka v7.0.0). We should configure the CI to run against older versions as well (we should also decide which ones we want to support).

For transparency: we moved this to the Future milestone, since the client library (Segment's kafka-go client) is taking the burden of version compatibility.
