Use besu config to specify Linea network instead of providing genesis file

Description

As part of #1618, we want to make use of hyperledger/besu#9436 to use the new config option --network=linea | linea_sepolia and remove the linea genesis files packed in linea-besu-package for besu profile.

Motivation

To ease the use of linea besu node without specifying any genesis file and to avoid mis-configuration of genesis files by providing a source of truth to genesis files.

Tasks

• Remove linea genesis files for besu profiles in linea-besu-package
• Remove linea genesis files in getting-started docker compose files
• Remove linea genesis files in sepolia and mainnet and use the besu --network config instead

Acceptance criteria

• List tests that need to be implemented or checks to consider this task completed.
