Upgrade the FPH i2s_audio component for ESPHome 2025.5

With the next release a couple of breaking changes will be introduced which we need to address:

• support for esp-idf 5.x.x i2s driver
• switch to callback based microphone readings
• introduction of a microphone source layer
• check the impact of the WiFi SDK setting updates
• micro wake word update (e.g. impact of stop_after_detection flag)
• voice assistant component update

Moving to p0. This is blocking people and getting a lot of questions.

The current version still runs in i2s legacy mode. In the next step I need to integrate the duplex support with the new i2s drivers.
The current version can be tested already:
migrate_to_esphome_2025_5

Should now also work with the esp-idf 5.x.x i2s driver. (legacy mode disabled)
