Add Unit Tests for healpix-convolution 

Description:
The healpix-convolution repository currently has unit tests, but we recently encountered bugs in pangeo-fish that originated from issues in healpix-convolution. This suggests that some edge cases or failure modes might not be covered by the existing tests.

Request:
Can we improve test coverage to catch such issues earlier?
