z_offset is undocumented in Dockable Probe documentation

The z_offset value is undocumented. It's pretty obvious what this is, but this is still a gap. Can it be automatically set with the PROBE_CALIBRATE macro? This kind of thing should be explicitly mentioned here 👍

As noted, many of the options are the same as [probe], and z_offset is explained there. It avoids duplicating the documentation too much.
