Auto-populate authors in docs

Authors are currently hard coded in the docs build. We probably would want to auto-populate it in the same way we do for other MDA projects?

The other thing I noticed was that the docs https://www.mdanalysis.org/GridDataFormats/ show

Release    0+untagged.1.g729d04c

so the doc workflow does not play nicely with versioneer. Not sure if there's anything we can do about it but I thought I mention it in a random issue related to docs...

possibly worth pinging @lilyminium - it's possible I messed something up in the docs deployment action.

With recent updates to the docs workflow, the version number is now properly displayed and thus #93 (comment) was fixed.
