Fix citation years - update 2024 to 2026 across all files

- Update CITATION.cff release date to 2026-01-25
- Update README citation year and BibTeX entry
- Update AUTHORS.md citation and last updated date
- Update CHANGELOG release date
- Update ZENODO_SETUP example citation
- Update paper.md publication date
- Update SECURITY.md last updated date

All citation information now correctly reflects 2026 release.
