As alternate solution it is also possible to use external disk (it really has sense only using ssd) without micro-SD card - just by cloning all partitions from micro-SD to external hdd and booting without micro-SD, there are some requirements
- USB-sata bridge or USB-nvme bridge must be compatible (I can suggest testing with standard RPiOS before)
- Raspberry Pi 3B+ works out of the box, but 3B or 2B need setting the USB host boot mode bit in the one-time programmable (OTP) memory.

It is also possible to install HAOS direct to USB hdd/ssd (using eg. Balena Ether) and restore backup similar as described in your tutorial.
Even more convenient is restore backup during onboarding instead of creating user account (I have created screenshot too late, but arrow points to click area to upload backup), of course it is for situation with system and data on external USB device
