Cookbook & Benchmark for DG meshing and simulation

Description

This is relatively straightforward, after having a working DG implementation, we need to have a cookbook and a benchmark that runs through the creation of a discontinuous mesh and the running of Ivy's problem (fluid-solid-bathymetry).

This run should highlight a speed-up without loss if fidelity in the output seismograms.

Tasks

• Implement benchmark with Snakemake workflow that first runs Ivy's problem first with conforming and then with discontinuous interface. The workflow's final outputs should be a comparison of seismograms and runtimes.
• Use this workflow to create a cookbook for the documentation.

Passing criteria

• Cookbook is neatly rendered in the docs
• benchmark is run without issue.
