Modify `data` structure

I like this dict a lot. What if we modified the data structure slightly?
Proposed:

    | -- NF0014
        | -- raw_images
        | -- z_stack_images
    | -- NF0016
        | -- raw_images
        | -- z_stack_images
    | -- NF0018
        | -- raw_images
        | -- z_stack_images

---

This way subsequent scripts just need to pointed to a NFXXXX directory and can use the same directory names without needed to change the names dynamically.

Please let me know your thoughts on this Jenna. We can talk more on Monday about this if needed.

I think these are healthy clashes in shared repos - we will both influence eachother's way of doing things to end up at the best way.

I think this is a great idea! As I said in the PR, it will be more clear how many patients we have and likely easier to parse later. I think this deserves it's own PR to update.

Once updated we will need to update paths in the QC module, which I am happy to do!
