Support latest versions of each engine.

Thank you for the ping.
I want to include an update for the elasticsearch side, and currently have issue with es:8.16.*.
v3.3.1 will be after that.

Any chance of support for OpenSearch 1.x? The Wikimedia Search Platform team will be migrating from Elastic 7.10 to OpenSearch and we will be stopping for a while at OpenSearch 1.x, and it would be easier to upgrade to Sudachi for Japanese-language wikis if that version was supported.

As it may take time to support es:8.16, I added an asset for os:2.18.0 to v3.3.0 release: https://github.com/WorksApplications/elasticsearch-sudachi/releases/tag/v3.3.0#:~:text=opensearch%2D2.18.0%2Danalysis%2Dsudachi%2D3.3.0.zip
