Docker with buildx, multi-arch and registry-mirroring in Colima

Hey everybody,

I've setup Colima to build multi-arch container images with buildx and now I am trying to setup registry-mirroring. I found some information on how to configure buildkit to use mirrors, but no matter what I do, I seem to be unable to get buildx to pull using the mirror.
I am running the mirror (actually a Sonatype Nexus with proxied repos) inside of Colima as well. Not sure if this is one of the reasons I am running into my problems...

Has anybody gotten this or a similar setup to work? I'm thinking of redoing the whole setup to get a nice, clean setup, so if anybody has any ideas or even a guide from scratch, please share here!
