cleanup examples

Hi,

I'd like some minor enhancements made to the examples, in order to maximize clarity of the documentation.

• Indent plugin keys one level inside the with: opening key. The current example doesn't actually parse in GitHub Actions.
• When the configuration is first presented in the README, begin by showing the smallest possible example. Critically, include some real, concrete YAML values after the colons.
