Discussion: Support for Apache Paimon REST Catalog Backend similar to Apache Iceberg​

With Apache Paimon now stably supporting the REST Catalog interface starting from version 1.0, it would be a significant enhancement if Apache Gravitino could provide REST Catalog backend support for Paimon, similar to the robust support it already offers for Apache Iceberg.

Gravitino's existing implementation for Iceberg REST Catalog demonstrates a mature approach to managing REST-based metadata catalogs. Extending this capability to Paimon would further solidify Gravitino's position as a unified metadata management platform for data lakehouses.

I'm interested in understanding:

1. Are there any ongoing efforts or plans to support Paimon REST Catalog in Gravitino?
2. What would be the potential challenges or considerations in implementing such a backend for Paimon, given the experience with Iceberg?
3. How can the community contribute to this feature?
