[Feature][Doc] Add doc for integrating a logging system for Sort

Description

In [Feature][Sort] Provides a method to add openTelemetryAppender for the sort connector #11065, we designed a log collection solution based on Opentelemetry for the connector module of InLong-Sort； And in [Feature][Sort] Integrate log management systems for connectors #11199, we integrated Grafana Loki to more conveniently display the previously collected logs.
There needs to be a document describing these

Use case

This document needs to describe the following:

• Why do we need to collect and report logs
• How logs are collected and reported
• How to give the connector the ability to report logs
• How to deploy and use the log reporting function
