appium:hideKeyboard: true will make some input boxes unable to pop up.
For example, this comment input box has setappium:hideKeyboard: true, and I cannot open the input box to enter text for comment.

I'd say this is expected if the application under test has some special IME-based logic, because setting this capability to true basically replaces the standard system IME with a custom/empty one.
Depending on what your application requirements are you may try to play with https://github.com/appium/io.appium.settings/blob/master/app/src/main/java/io/appium/settings/EmptyIME.java , otherwise I don't really have any more suggestions.
