This was was first requested in #532 (review) and previously attempted in commit 4350bf2 but restic refuses to read files mounted as a bind mount (volumes are not a problem).
This is either a problem with the way that restic interacts with mounted file systems or it's a docker configuration issue. At this time I am not sure and I am unable to debug the issue.
This needs further investigation at a later date.
