Cutaways on base sphere

As a geophysicist, I often find myself trying to plot 3D volumetric data within the Earth. Right now I'm getting away with adjusting the meshes according to a function I show in #1338 , then by adding several hundred km or so to the Z axis.

But showing the volumetric data like this introduces some perspective warping. It would be nice to be able to perform set operations on the base gv sphere itself, especially when the cutting happens below a general spline.

@k-a-mendoza Would it be possible to share an image of what you have at the moment, just to clarify? That would be super helpful.

Also, note that we'll soon be adding support for structured/rectilinear grids akin to this example, which might be more suitable to your needs?

Yeah! Here's an example from a recent talk of mine showing both a 2D and a 3D model overlayed jointly, albeit floating 600km above the surface (and 1200km above where it should be). It would be handy to place them right in the Earth, and do set operations on the sphere separately to "peel back" the surface at strategic points.

The rectilinear grid support looks wild! and super useful! Lots of geophysical datasets are equigridded (thought none of mine at the moment).
