Update clickhouse chart

The current clickhouse chart we are running runs clickhouse version 25.4.2: https://github.com/bitnami/charts/blob/clickhouse/9.2.2/bitnami/clickhouse/Chart.yaml#L16

Per clickhouse's support documentation only that last 3 stable releases are supported, and they are up to 25.9. They do have releases marked for LTS (long term support) that are supported for a year so we may want to preferentially choose to update to one of those (25.8 is LTS)
