First of all, amazing project, I am so happy I stumbled upon it! Kudos to you!
I am a long-time calibre user and wanted to spin up calibre web, when I found this. My entire calibre library lives on my Synology NAS, and my docker engine runs on a windows machine. Docker on Windows does not play well with network shares so I had some headaches configuring this (I naïvely started with mapped drives ... nope ... cifs client ... nope ... persistent mount ... nope... ) - so had chatgpt document how I ended up doing it successfully in case anyone else starts banging their head against the same wall :D (disclaimer ... Windows is not my OS of choice typically, I know enough to be dangerous, but definitely not a pro ... so I might've missed something along the way - either way, this approach did work for me, so I hope it helps someone else)
