Helm Elastic deployment - replacement

At the end of August, The Bitnami Elastic won't be free anymore
Find Elastic/OpenSearch (helm) or deployment that we can use and update our chart with it
Consider using OpenSearch and not Elastic

1. Understand if we can use it with Jaeger
2. What are the differences?

Then let's discuss with @shaykeren and @doppleware about which one to use
