Allow configuring log levels in production

I'm currently running docuseal in a pod on eks. It was running fine a few days ago but now all requests are throwing a 500 error and the log messages aren't super helpful as to pointing to the cause. As far as I can tell with the help of AI is that there is an issue with the dashboard controller method/page/view.

Providing the ability to lower the log level to debug would allow users to better and more quickly diagnose config issues or report build issues.

Ah, d'oh. I pulled up our logs explorer and got the full trace. I redacted some identifiable info, but otherwise it should provide the info needed.

It seems the issue is with the HOST env var being protocol-less. Once I set the https protocol, it worked.

Your SECRET_KEY_BASE has been changed so now it's not possible to decrypt database rows

If SECRET_KEY_BASE is not defined in env variables - a randomly key is generated and stored in a file on disk.
Adding SECRET_KEY_BASE later after the app was created with a different autogenerated key can cause decryption error.

If your EKS has persistent disk - remove SECRET_KEY_BASE from env or copy the SECRET_KEY_BASE key from docuaseal.env file and put it in ENV

Gotchya. We're standing this up for initial use still, so there must've been a deployment that did not have that env var set. I've ensured it's set and rebuilt the db and the app is accessible now.
