generate diff plots and animations

Describe the task. It can be a feature, documentation, etc.

during plotting we should generate absolute diff plots like:

prediction - target

and the related animation.

TBD if we want to make it customizable and support also relative differences ((pred - target) / target) or ratios, like pred/target, with a flag in global_plotting_options.
