Add example config showing more advanced configuration options #37
Description
The default config is very small and adds a few basic keybindings and tags, which means that it is not very helpful for new users trying to create a more customized config. To make it easier, we should add a larger example configuration that clearly shows how to setup xkb rules, monitor rules, adding a startup hook, etc.
