JSON log output format for Envoy Gateway

I see in the docs that Envoy Gateway currently only supports configuring the logging level. The output format is plain text, while for me it would be easier to parse logs as JSON. This is possible to configure for Envoy Proxy and rate limit, but not for Envoy Gateway.

Would it be in line with the project goals to add a config option for this and set console or JSON output format in the logger config?
