Adding new maintainers to Maintainers file in Fluentd project for CNCF status

Describe the bug

Part of the process to add @paigerduty and @eschabell to the Fluent project as maintainers of the Fluent Bit website and docs projects, is to add them here: https://github.com/fluent/fluentd/blob/master/MAINTAINERS.md

I've also updated Eduardo's company affiliation as Calyptia incorrect.

To Reproduce

The only option for this issue was a bug report, so nothing here to reproduce, just updating this maintainers file: https://github.com/fluent/fluentd/blob/master/MAINTAINERS.md

Expected behavior

Adding two new maintainers and updating Eduardo's company affiliation.

Do you mean that being added to the Fluentd maintainer list is required in order to be added to the Fluent Project (https://github.com/cncf/foundation/blob/main/project-maintainers.csv)?
