This change will amend the documentation to reflect that Flink 1.20 is now supported and will update the pr yaml to ensure that fixes are built against 1.20.

should we drop 1.16 from the pr build? @kristoffSC @MarekMaj
I will look at this once my 2 prs that are currently unmerged are in.

From my experience the latest release of the connector works well with flink 1.20 as well. Flink interfaces have not been modified in incompatible way. Flink 2.0 will be released early next year, so I suggest to skip 1.20 and focus on 2.0 when released.

@grzegorz8 @xaniasd @kristoffSC Looking at this in #140 . Currently the CI is failing so I marked it as draft. As you can see in the PR, I am looking to amend the main pom file to build on Flink 1.18.1 and have included 19.1 and 1.20 in the build yaml.

Are you ok with this approach of supporting the 3 latest Flink versions, replacing the 3 older releases we build against currently?
