Idea: Observability around ingester grpc client #12138

What is the problem you are trying to solve?
Hi Team,
We are on Mimir 2.16.1 and were checking observability around ingester grpc client's retries but couldn't find one.
It will be helpful to see how many request were retried in case of 5XX failures.
