Echidna could not be used for fuzz testing because it was apparently not compatible with Solidity 0.8.x.
We should check if that is still the case, if not then try to integrate Echidna into our testing suits.
There is already a branch that was created for testing echidna :
https://github.com/hashgraph/hedera-accelerator-stablecoin/tree/feature/echidna
