Rename `plugin.name` to `plugin.$name`

This has a few benefits:

- meta fields will be prefixed with `$` to differentiate them from plugin options
- `$name` will be on top when sorted alphabetically, allowing for faster scanning
- `name` becomes available for name builders, resulting in more consistent APIs
