add workflow to create pre-packed zip files with different setups

We should add a workflow to the main repository, that does something similar like this one here.

The difference is, that we should not zip a whole folder, but copy certain files depending on the config.
Maybe we can do that for fullnodes/validators and also for docker/systemd.
