[task]: Branch Migration: Create v1 Legacy Branch and Replace main with v2 Content

Goal

prepare helm v2 charts for next major version

Proposal

• create a v1 branch from main for v1 charts. We don't plan to maintain them any longer, but just in case of emergency fixes
• [] replace main completely with the content of v2 branch
• [] fix the main readme to point to legacy v1 branch
• [] fix the Helm integration such that v2 charts are now the next major version
