Is there any interest in making a flatpak package?

Flatpaks are everywhere nowadays, and I feel like this project would greatly benefit from being available across a much larger number of distros without relying on anything distro specific.

I'm not convinced. I tried with AppImage and it worked for a while before it started having unsolvable problems. So I don't want to waste time on these things anymore, there's Pyinstaller and it's been working fine for several years. I prefer to use that if your requirement is to have an application in a single package to run on multiple Linux distributions.
