The default sort order should be a quick setup in the grid builder
ie: $gridBuilder->setDefaultSort($sortKey, $sortOrder)

Temporary (and ugly) quick fix for project using the datagrid:

// src/Controller/yourControler.php
        

if ($request->request->get('sort_by') === null) {
     $request->request->set('sort_by', 'createdAt');
     $request->request->set('sort_order', 'DESC');
}
        
// $gridBuilder->create(......);
