Log langsmith traces to specific project

Log traces to specific project dynamically for each flow.

EDIT:
For more context it becomes a need to get multiple tenants and environements on the same Kubernetes deployement, along many other apps so I'd need some way of differentiating in some ways projects.
And the clean way to do it would be via workspace > project :)
