[BUG] - Can't edit extra long category name depending on resolution

• I already read the docs and didn't find an answer.
• This issue can be replicated on the demo site (https://demo.mealie.io/).

What is the issue you are experiencing?

When adding an extra long category to Mealie on certain screen resolutions 1920x1080 you lose the ability to edit/delete the category. I was able to edit it on my ultra wide monitor resolution (3440x1440).

Steps to Reproduce

1. Go to organizers and select categories
2. Click on the + Create button.
3. Type a long category name i.e. SC 2025 Holiday - Thanksgiving
4. Try to modify or delete category name
