Add Support for MP3 Encoding Profiles in MediaCMS

Description:
Currently, MediaCMS allows for defining encoding profiles for video content, but there is no option to add MP3 as a supported encoding profile. This request is to enable the ability to add MP3 as an encoding profile so that videos can be processed and served as MP3 audio files.

Proposed Solution:

Allow MP3 to be added as an encoding profile in the existing encoding workflow.
Ensure the system can process video files and extract audio to encode in MP3 format.
Enable serving MP3 files similar to other encoded formats.

Use Case:
This feature would allow users to generate audio-only versions of video files, making MediaCMS more versatile for podcasting, audiobooks, and other audio-focused use cases.

I'm fine to add an audio encoding, if there's the need for it. What could be some sane defaults here? Eg convert to mp3, at specific quality specs?

Here are three quality options you could add:

Low Quality (Compact Size): 96 kbps  (Good for voice/podcasts)
Medium Quality (Balanced): 192 kbps (Ideal default for general audio)
High Quality (Best Fidelity): 320 kbps (Suitable for music and archival use)

I'm sure there's room for argument here but that seems like a good standard for most use cases
