fix matching parentheses like copilot.el

It'd be nice if we had something like https://github.com/copilot-emacs/copilot.el/blob/main/copilot-balancer.el so that the parentheses do not become unbalanced after completing with AI.

The code for copilot-balancer is a bit complex. As a result, honestly I do not have the skill to maintain the parenthesis balancer code.

Rather, how about I expose a hook minuet-completion-items-filtering-functions and you can run the hook on the completion items returned by the LLM so that you can try to balance the completion item by yourself?

I think that hook is a good idea, and maybe someone can later on share their logic here!
