Replace Redis Stats management GUI with own implementation

When this plugin was initially implemented, it was fine to use existing Redis Stats management GUI as basis. However, it required some tricks to make it into a Moodle plugin and the solution is not perfect.

It might be worthwhile to re-think if the few features of this plugin could also be implemented as own implementation and to remove the dependency of the Redis Stats management GUI.
