Config option to replace log4j2.xml

Nobody else seems to want this feature, but it would be immensely useful for niche cases considering NeoGradle has this feature out-of-the-box. Personally, I prefer Fabric's logging to NeoForge's, so not having to replace the file every time I reload my gradle project would improve my quality of life.
