https://pradyunsg.me/furo/ has cleaner internal code structure than https://sphinx-book-theme.readthedocs.io/. We can still use all the plugins designed by the latter group (in fact furo's author is part of the latter team) but with more manageable themeing. It's also what's currently in use on https://spinalcordtoolbox.com/, so we have experience with it in the lab already.

The biggest blocker I see at the outset is that Furo doesn't come with Github links built in, so we'd have to extend its HTML templates to add them.
