Upgrade to redis 8.x with nc32

• redis 8.0 is getting tested after https://github.com/nextcloud/docker-ci/actions/runs/14855572983 and one successful run in test CI with redis 8.0 server#52650.
• upgrade manually to 8.0.x in https://github.com/nextcloud/all-in-one/tree/main/Containers/redis
• remove version-update:semver-minor in

  all-in-one/.github/dependabot.yml
