insert current date when completing a todo

is it possible to set up a ToDo completion in the config that inserts the current date instead of any particular symbol like is shown in the videos?

I have a list of Todos that repeat once all todos on the list are complete, I'm currently unchecking them manually which is fine, but I want to be able to see which were completed that day so it would be cool if I could put in a keymap that inserts today's date instead of the checkmark or whatever else.
