Fix elastic logging to elastic 8.x

Looks like `elasticsearch==8.x.x` has brought backward-incompatible changes which led to breaking the logging (e.g. https://github.com/IMInterne/python-elasticsearch-ecs-logger/pull/2). Would be great to review possible options of elastic logging and change to the one which supports new version
