Bug: image builds take a really long time #59

Describe the bug
During image builds, during release, image builds take a long time:

this one took around 2+ hours. Which isn't aweful but is still pretty long. It'd be interesting to investigate having our own runner that we can use to do these builds. If we get to a point where we need to ship this more, we can investigate that.

- Cut release
- Note how long it takes to build/publish the image
