Add YAML examples in the specs

At the moment we provide all the examples only in JSON format. YAML it seem to be more used as the preferred format in other specs because is less verbose and more readable for humans. We need to provide examples in the spec both in JSON and YAML format as done by AsyncAPI and OpenAPI
