Support securing W3C VCs using SD-JWTs

The W3C VCDM 2.0 supports Securing Json-LD VC with SD-JWT. This should be mention as a way to handle W3C Credentials in Section A.1. W3C Verifiable Credentials.

This would allow for selective disclosures with W3C Verifiable Credentials, which jwt_vc_json and jwt_vc_json-ld don't support. In addition, this integrates nicely with the vc+sd-jwt format and thus provides a potentially easier way to do selective disclosure over using Data Integrity Proofs (ldp_vc) which might require Linked Data canonicalization.

Appendix A is specifically about VCDM 1.1 so I don't think we should add anything about VCDM 2.0 in there.

There is an issue about adding an W3C 2.0 appendix here: #194 - I think we can merge the two issues together if that's okay with you?
