Bump genome version to 112

Version 112 is out since May, would it be possible to bump the max_release_version to 112?

Related question - why there even is max_release_version? Wouldn't it be better to leave it to the user to input a valid version number, and just give an error when a requested release version is not available from the Ensembl server?

Following up on this issue. The latest version with support seem to still be ensembl 111.
What is the recommended path forward if we need to use a newer version of ensembl? Should we build the libraries ourselves using the pyesnembl install from source files?
