API's when client is server should be limited (only 1 enabled model, etc). When calling v1/models only return the single model currently set as the default. Also includes defaulting client=server when headers does not include.

@corradodebari this has something to do with OpenWebUI... can't remember what. Can you elaborate why this is required?
